1 Medium Eggplant
Capers, Golden Raisins, Tomatoes, Olives
Red Pepper, Garlic, and Onion
4 ounces Parmesan
1/2 cup risotto
8 ounces Chicken Stock
Olive oil, Butter, salt, and pepper
